Guacaya Bistreaux brings together the vibrant flavors of Caribbean, Panamanian, and Southern Louisiana cuisine through Chef Pedro's rich tapestry of influences. This lively, inclusive neighborhood restaurant is guided by the pillars of “Diversity, Respect, and Family,” offering fun, thoughtful, and eclectic food and beverages.
Born and raised in Penonome, Panama, Chef Pedro was inspired by his abuela, a passionate family cook. Now at the helm of Guacaya Bistreaux, he and his wife create a welcoming space that blends the flavors of the Afro-Caribbean diaspora with the bold tastes of Louisiana, where he immigrated.
With a focus on accessibility, the restaurant features a curated wine list and inventive cocktails by Earl Giles, designed to complement the diverse range of flavors in its cuisine.
From Panamanian Chef Pedro Wolcott (formerly of Cochon Butcher, Baru Bistro, Commander's Palace, and Emeril's NOLA Restaurant), Guacaya Bistreaux offers a vibrant and approachable dining experience in the heart of the North Loop.
